Preparation
Jelly nuts are opened by using a machete or sharp knife. Gradually cut away the husk from the top to reveal the shell. One or two firm hits on the shell will cause it to break and reveal the water and coconut meat inside.


Usage
Jelly nuts are used for their coconut water. The coconut meat can also be eaten.


Storage
For the longest shelf life you can refrigerate jelly nuts but the cooler temperatures will cause the exterior husk to turn from green to brown. To maintain the green colour keep the jelly nuts cool but not refrigerated - around 10 degrees
